Mac ‘n Cheese

As a mother of two small children, I have an obligation to perfect certain meals, one of which is macaroni and cheese.  I have been trying to make a homemade version for years and it never comes out right.

I have nothing against Kraft Macaroni and Cheese – that is what I grew up on and that is what I make for my kids on any given day.  However, there are times when I want something a little more exotic when it comes to my cheese and pasta.

My first real attempt at making homemade macaroni and cheese was with a Martha Stewart recipe.  It was a 5 cheese recipe that probably cost me about $40 in ingredients because of Martha’s snooty cheese choices.  After all the work and expense, it was just OK.  Nothing that I ever intend on making again.  In fact, it was kind of dry and the flavor wasn’t great.

The last time I tried to make it, I used a Paula Deen recipe.  It was a crock pot recipe so those always score well with me, unfortunately, my crock pot cooks at a pretty high temperature even when it’s on low and I ended up with scrambled eggs and pasta.  It was not good, but I knew the potential was there.

Today I tried the recipe again, but instead of putting it in the crock pot to cook, I heated it on the stove so I could monitor it a little better.  Winner, winner, mac ‘n cheese dinner!  It was creamy goodness in a bowl and at Kamryn’s suggestion, we topped it with bacon.

I don’t think my mac ‘n cheese falls into a very St. Patrick’s Day theme so we’re going to make some Shamrock Shakes and watch Teenage Mutant Ninja Turtles…’cause they’re green.
